ChrisMack
Hi guys....I'm thinking of adding some crystal malt to a lager brew - just wondering what amount you guys would recommend? And what effect the malt will have overall on the brew tastewise - I believe it should give a toffee/nutty taste... Cheers, Chris
Canadian Eh!L
Hi Chris, Crystal Malt adds very little in the way of fermentables, but the dextrines and other nonfermentables add enhanced mouthfeel, body, reddish colour, head retention, caramel/nutty flavour and sweetness to differing degrees. I personally use 100g-300g depending on what effect I'm going for. Up to 100g can be added directly to the boil for the last minute with no ill effects, but any more than that should be steeped. To avoid harsh flavour use no more that 20-30% or less than 500g/20L
