PB2
We recommend to condition European Lager in the bottle for 12weeks. But you can taste it any time you like, we encourage brewers to smell and taste the brew prior to bottling... A fining agent draws the yeast out of suspension, reducing the amount of yeast that is carried over into the bottles. We don't recommend the use of fining agents because any intervention to the brew increases the risk of spoilage and the yeast will settle out sufficently if left for a couple of extra days in the fermenting tub once fermentation has stopped. Also, fining agent may reduce the yeast count too low which may impede the secondary fermentation process.
