I also bittered my Parti-gyle brown ale with it a while back. All of these brews worked out really well! I've only ever used it as a bittering addition. Works very well in English styles. I haven't endeavoured to use it as a late hop yet. It's one of those "interesting" hops that give something else then just neutral bitterness similarly to Centennial. Unlike Magnum. I was wondering what you thought of the recipe. I was thinking of Burtonizing the water profile. but not sure. I was wondering what water profile you use. It was amazing and I made a mental note to brew one. I'll be keeping an eye on the recipes that you guys brew over the next month or so. Scottie Posted February 8, 2016 Share Posted February 8, 2016 Hey Brewers I have completed my second version of Otto's Red Ale: 10.00 g Gypsum 5.00 g Calcium Chloride 4.20 kg Pale Malt, Maris Otter 0.30 kg Caraaroma 0.12 kg Acid Malt 0.07 kg Black (Patent) Malt 90 minute mash at 66 degrees Celsius in 12 litres water. 20.00 g Cascade [5.50 %] - First Wort 12.00 g Northern Brewer [8.50 %] - Boil 60.0 min 20.00 g Centennial [10.00 %] - Boil 20.0 min 0.50 Items Whirlfloc Tablet (Boil 15.0 mins) 1.0 pkg Windsor Yeast (Lallemand #-) Put 25.5 litres into the FV and pitched the yeast into a 25 degree Celsius wort of 1.039 SG. Are you going to dry hop? A 50g Citra thrown in would be good. As for my water I don't go big at all, I just top up as per Brun Water. Going by the colour of the brew. It would seem that I barely had any Mosaic left (only 10g) so I changed the hop schedule. I subbed the 15 min addition of Mosaic for Amarillo and the 10 min changed to Nugget. I'm not sure how that yeast compares to the 1318 I used in the most recent batch, but I enjoyed the how the different flavours presented in it better than when I had used US-05 in it.
