Nick Posted February 14, 2014 Share Posted February 14, 2014 hi James, the Pale ale and malt is a great combo, especially with a dry hop of Cascade or similar. I would definitely rethink the honey though. I have made a couple of brews using the Canadian blonde and OS lager, and even with only 300 gms, the honey flavour has been too much for me. I used yellow box honey which is fairly mild, so consider the type you use. Maybe try a smaller amount to start with as you don't want it to dominate. I have also found that the honey flavour does not diminish with time, in fact it seems to intensify as the hop flavours of the Pale ale reduces, which is another reason to be sparing unless you really like your honey. As would be any fruity hop. 1kg DME in 10 litres, boil 20g hops for 10, 20g for 5, then dry hop with 20g when fermentation has stopped, for two days.
