DaveH21 Posted April 10, 2013 Share Posted April 10, 2013 A straight rip off from PB2's Motueka Slam IPA. 1.7kg Thomas Coopers IPA kit 1kg Light Dry Malt 30g Galaxy Pellets (in chux) Made to 22 litres (had to cool it so needed an extra litre of cold) US-05 Yeast It was day 3 today, so dropped in the Galaxy hops - WOW ! Prior to this, I was smelling the brew thru the pin prick in the top of the glad wrap. A rich sweet malty smell coming threw and still a thick krausen head. I got my Galaxy out of the freezer and measured out 30g. My wife thought it was pot (can't blame her - it looked a bit like pot and had an extreme pungent smell). Anyway, I dropped the Galaxy in, put a fresh skin of glad wrap on the top and went away for a few hours. When I came back, the krausen seemed to have got bigger and thicker and I held my nose over the pin prick again. What a difference that Galaxy makes. I've been drinking the Vale IPA (from McLaren Vale Brewing) this week and after the above experience, I've gotta say that the Galaxy is prominent of the Vale IPA's nose. My brew is smelling great with that Galaxy dominating but still has a backbone of rich maltiness underneath it. Really looking forward to tasting this one in a few weeks. This has given me some ideas for my next brew. I think I will go for an "Anzac" pale ale, in the style of the American, but only using ANZ hops. I must say though, after drinking a fair amount of Vale IPA at work on Fridays, I don't really like it. I certainly don't want anything in that vein. I quite enjoy 1 or 2, but that's about it for a session on this style. I like the American Pale Ale style, and I really love Coopers Pale on tap at the local. My mission is to brew something I can call Aussie Pale or Anzac Pale - using OUR local ingredients. That is how the American style came about - the yanks using their locally available ingredients. The skunk or the bitterness? Oh no, I love the style. It is more the clash of the flavours in the Vale IPA that I don't like. For me the hops just don't blend well in that beer. I prefer something like Sleeping Giant, subtle but the flavours work well together. Even SN Torpedo I got into after half a glass...yea it is hoppy and bitter but in a good way, it works. In regards to Slam IPA (Moteuka or Galaxy) I am keen to build one of these from an unhoped Malt base. Mainly because I appreciate the bespoke nature of this type of brewing. I have previously asked the question regarding a extract version of PB2's Moteuka Slam but did not receive any tips. So I went with the kit version. I used the US-05 yeast for the first time - boy o boy does this stuff build up a krausen or what? It's day 7, it's down to 1011 and I still have a 2 inch krausen on the top. [roll] It's a great yeast, but when I'm wanting a peek at the surface of my wort I've been known to stand next to my open brew fridge shaking my fist at it. DaveH21 Posted April 13, 2013 Author Share Posted April 13, 2013 LOL Philbo I just had a small taste of mine - it's still cloudy so it hasn't started settling under the krausen yet - still fermenting I think.... This IPA I have going has a nose almost identical to Stone & Wood Pacific Ale - almost apricot like. The finish in the mouth is much much more bitter though. I generally do, but I think I may be suffering from US style hops overload. I am finding myself craving more subtle and malty beers at the moment. DaveH21 Posted April 21, 2013 Author Share Posted April 21, 2013 Hi Guys Just bottled this brew that I started the thread with. I tasted a bit as I bottled it. I'm glad I added those Galaxy at day 3. It has given it that lovely passionfruit/apricot nose. I have to say, I am surprised at how bitter the brew is considering the malty backbone on the nose. When making this again, I would only go for the dry hop for my tastes. I like the bitterness, but I wouldn't adding anymore. Anyway, I will re-evaluate this after a few weeks in the bottle, when I can drink it cold and with some carbonation.[roll] Link to comment Share on other sites More sharing options...
Khellendros13 Posted April 21, 2013 Share Posted April 21, 2013 Remember the bitterness will mellow out. 1 week in the bottle, the IPA kit is just bitter. 3 weeks on, the hops start to really shine. I couldn't wait any longer [lol] It's already holding a creamy head and it tastes fantastic [love] Can't wait to try this again in a few weeks, but it 's already tasting great. I will DEFINITELY be using this Thomas Coopers IPA Kit again - I might even use the exact same recipe with the Galaxy - coz this beer really floats my boat.
