Aztec Warrior

Hi Guys

 

My mate and I had a few mates over to rate and disect our current 10 beers of various ages 150ml of each, great arvo. Our variation Mexican Cervesa was the winner.

 

Aztec Warrior

1.7kg Coopers Mexican Cervesa

1kg LDM

500g Organic Honey

30g Galaxy finishing hops

Kit yeast made to 20 litres

 

Beer drinkers and non beer drinkers love it [biggrin]

I just had the same result with my Cortez The Killer. [bandit]

One of the guys has owned pubs for 30yrs and he loved the stuff.

Non beer drinkers also tried it and loved it.

 

Mine has Lime and honey added and is made using Rice Malt and was lagered at 12C for 3 weeks.

 

A little variation on what i consider a normally a pretty weak [pinched] beer can make it very nice indeed.

 

Wont make another until next summer.

thanks for the recipe.

 

i was tossing up between the Cerveza and the Canadian Blonde for my next brew - my friend made up my mind when she bought me the Cerveza can because she wanted me to make it.

 

even with that said, I'm keen to make it more interesting, because Cervezas, as we all know, can be horrendously bland.

 

Using the Aztec Gold as a base, I've picked up some Cascade hops on the recommendation of the brew shop, and I have dextrose and dry malt to go with it - I'm going to try and give it a bit more taste without over doing the sugar content.

 

The brew bloke had recommended galaxy as well, but he'd run out. (i need a better understanding of different hops, but at this early stage I'm just happy to take the brew shops advice)

 

Love the honey idea... I'm interested to give it a go using lemon or lime rind.

Hey Michael,

 

Good looking recipe, just back from Kangaroo Island and have got 3x500g pots of Cliffords honey to use so this recipe fits the bill. Couldnt get hold of Galaxy so gone with PoR.

 

Did you use the kit yeast and what temp did you ferment at?

 

Also, why 'organic' honey specifically? Does it add to the final taste of the beer being 'organic'?

 

Looking forward to putting this down and trying the end result, thanks heaps for the recipe.

Im on a hop discovery trip aswell, plus what yeast do what.

 

Yeah Cascade will still give it a floral/spicy flavour but I think it has a more dominate citrus they say grapfruit which works fine with this ammended cerveza, the Galaxy just has a passionfruit addition which worked well, and the later you add it the better if you want that style. Stella is similar but slightly different. Havent used Citra but it would work too, don't know if Styrian Goldings is an option BUT I have heard Glacier gives a lemon twist flavour which may be the best way to get that taste (I've used real corriander and orange peel with grated ginger once got it all out of wack balance wise ?)

 

But glad you want to make it swap stuff around to suit, the honey was a friends honey raised honey not processed very strong colour and taste but it just left a slight smooth/sweetness not dominate.

Give it a go its awesome early in it's life I have put some away to check what effect age has on it.

 

Yeah I wouldn't go PoR, Amarillo or Cascade would work, haven't tried Centennial or citra but they sound like they would work.

 

Kit yeast worked fine, I made it to 20 litres to condense flavour.

 

Honey is processed differently from home bee keepers to commercial blends, I won't know if that honey was special till I make it again which will be towards the end of March/April (making it again cause people went crazy for it and I have next to none left )and I think yes organic produce has more flavour.

 

Now the temp I put it down on a 19C day to stayed around that in a shed (no climate control) and fermented out at ave of 23-24 over 2 weeks then 2 extra days waiting for bottling.

Given I have a few bee hives and heaps of honey. Honey as a great fermentable sugar so going with this recipe with a twist.

In the fermenter and looking/smelling the goods.

Calling it the AMW which is Aztec Mad Warrior.

The beauty of doing brew differently & not following the traditional norm.

Flipped the top on the first stubby tonight.

Really pleased with the result, good carbonation after just on two weeks & what a great brew, beaut summer beer.

Forget to take some pictures such was the enjoyment in the taste test. Will do when I knock the top off a long neck.

Highly recommend this brew. Give it a whirl?

You wont be disappointed if you like a crisp spirited summer beer.

So what recipe did you use? Did you use the kit yeast or another yeast?  I assume the kit yeast is an Ale yeast.   Also is it still at the ridiculous 6.1% because that is hardly a session beer?

Hi Marty,

Roughly the Aztec Warrior recipe above with a few changes. My last cheap Mex Tin from Woolies Sale.

Yes used SO4, 1kg LDM was split that into 500g LDM, 300g Dext & 200g Malt Dext. Boiled 30g Galaxy for 10 min & dry hopped 30g.

Honey is my Hive Honey so I know its a 100% honey and the flavour is from Apple & Pear Orchard tree pollination (last years harvest).

Agree it is not a session beer. But I think its damn good tasting brew. Pleased I found this gem. Will brew another one at least for summer.

Will share it with a few mates over this week to get some taste test feedback. That's always the leveller.

Could try 23l to lower the % but probably thin it out though.

Sound good, I may have to alter the fermentables to get the ABV down a bit but I think dropping the Dex and Malto off and reducing the LDM to say 200g but still using the honey would drop it to a level I can drink it at. Unfortunately my days of drinking heavy ABV beers are now history I have to get my brews down to around the 3-3.5% mark ...
