Grand Final Stout

Seeing as its Grand Final day here in Melbourne and i have absolutely no interest in it i thought i would make up a nice stout. I have a couple of cans of Coopers stout i bought on special so i thought i would use the both up

 

2x 1.7kg Coopers Stout

 

1kg Light DME (hopefully smooth out the bitterness a bit)

 

500g Lactose

 

15ml Liquorice Extract

 

25g Fuggles pellets into the FV before pitching yeast

 

2x sachets the kit yeast

 

will let you know how it goes once i brew it up.

I think your OG is too low. Are you sure the wort was properly mixed, and did you discard the first sample? I would have expected it to be up around 1.080.

 

Everything mixed and remixed, i am ver thorough with my recipes.

Did the sample with the refractometer, my Extra Strong Vintage Ale was 1.060 with 1kg of Dextrose so my gravity of 1.055 would be correct on those figures.

 

I will just add to this in case people are confused

the 500g Lactose and 15ml Liquorice Extract are not fermentable.

Apparently not mate, i think they would sell a few if they did.

Jason - just grab a 25L water container for about $15 from bunnings (they look just like a fermentor). They do the job perfectly.

I have had some tap problems but i am hoping i have it sorted with the use of olive oil on the rubber fittings as recommended by Coopers, its been a real PIA for 2 brews but nothing on the 3rd one so far, fingers crossed.

I tried one of them last week and the seal failed straight off. Slow leak from the tap mount, and when I went to tighten it the thread popped out a turn instead.

I'd take it back and get the vessel or the tap replaced. I've never had a dud from them (they're pretty popular on AHB too - so there are a lot of people successfully using them).

If it is faulty then take it back. I haven't heard anyone with these problems either.

Day 6 and i take a gravity reading with my new hydrometer and the refrac. OG 1.055 day 6 1.034 remembering i have 1 kilo of unfermentable lactose in there not fermenting the lactose sugar out so this high reading is to be expected, but a little higher than i expected. The stout tastes very good and the bitterness/sweetness combination is just right. Will take a 500mm sample tomorrow then another week in the FV and we will bottle it up.

Day 7 the gravity dropped another 2 points to 1.032 and the brew is sitting between 18 and 20C all week. Drew off 500mm to trial next week and left the FV to ferment out for another week. The 500mm i bottled i used 1 carbon drop as i dont like my stout over carbonated

and theres still a bit of oomph in this one yet. I find the carbon drops good for when i draw off a bottle, no mess no fuss, i have also worked out if i give them a light crack with a small meat tenderiser mallet they break in half. Will probably go to bulk priming for awhile and then kegs. Tastes very very nice, cant wait to condition it and get stuck into it.

Well well well this stout that i took a sample of a week ago is da chit, drank a pint and wanted more, this was after bottling 25 big bottle all up [love] . Its going to be a ripper with more maturity.

 

ABV approx 6%

If you do this one take your OG before adding lactose as it boosts the sugar content but doesnt ferment

I gave this a session last night and its heaps better than a week ago by a country mile. Cant wait to see if i can get a couple put away for a month or more, this brew should be cherry ripe by then. I think i will do a second batch soon [love]

Hi there Tony, thanx for the recipe, i put one on today. I used 1kg of dark malt instead of the light and got an O.G. of 1.078(pre lactose as you suggested), just wondering what kind of F.G. i should be expecting...how high was yours?

with the lactose it was 1.030 so take off 10points for the lactose approx 1.020

 

I screwed the OG i read my Brix points wrong i think as someone else suggested (dont drink and brew beer) [roll] i broke my good hydrometer and misread my refractometer.Redoing my calculations it should read approx 1.071 OG so we are looking at 7% to 7.5% ABV
