TonyW Posted September 6, 2011 Share Posted September 6, 2011 Plenty of beer recipes using banana although i have never done one i think the germans call it banana weizen. I use alot of different fruits in my ciders fructose being fermentable. I was told i couldnt make a cranberry cider but the one i just bottled has come up a treat, so all you gotta do is have a go. Guest Posted September 7, 2011 Share Posted September 7, 2011 To do a banana beer properly is time consuming and personally I wouldn't bother (How To Make Banana Beer). However, if you are wanting a banana flavoured beer then I would do a wheat beer and ferment it with Wyeast Weihenstephan Yeast (3068) and ferment it around 25C-28C. I have made both an Ale and a Stout using bananas , I was very disappointed with the stout - the banana was lost in the caramel, coffee, chocolate and the aroma was very, very faint. Next time I plan to use essence for the stout. The Ale (All Grain) was fantastic. So go ahead, but don't waste $12/Kg in a wheat beer when the aroma and flavour is all about the yeast, as Bill points out Link to comment Share on other sites More sharing options...

peterw20 Posted September 14, 2011 Author Share Posted September 14, 2011 thanks fella's, problem i got here is lack of brewing ingredients, got basic coopers and homebrand gear here, but unless i get online and order and list is $100-00 or more it's not worth it, i put down another Coopers stout+BE2+1.5KG banana's(inc skins)+1 tin cond milk, i'm pretty impressed with the milk stout from last month has been barely 10 days since bottling and taste's nice[biggrin] will be in Darwin next month so will stock up on different yeast's and gear and plan my next brews so i'm not short of ingredients.
