Matty A
I recently made one of these. http://www.coopers.com.au/the-brewers-guild/how-to-brew/strong/extra-strong-vintage-ale I havent tried it yet but from the sample out of the fermenter it is going to be one of the better beers I have. Trusty1
My Mrs almost left over hops, she blew up when I started boiling them in the kitchen. Very unhappy, she didn't like the smell at all, but I convinced her to stay[happy] ! To keep it simple, I reckon you could use the hops that are remaining as a late dry hop addition to something like a Canadian Blonde or even a O.S. Draught kept nice and simple, maybe BE1 and 500gms of LDM, or a 1.5kg can of light malt extract. I enjoyed a few Knappstein Special reserve lager recently, so the O.S. Lager made as mentioned above could go OK also. Anyway, by late dry hopping, you will stop anyone complaining about the smell in the kitchen. PB2
For best longevity, seal them up with minimal airspace and keep in the freezer. Will last for months. [biggrin]

Muddy Waters
My missus has never complained but then again she cooks far stinkier stuff [sick] I think the smell is quite pleasant myself.
LeonardC2
I must be a lucky man,my missus like the smell of hops when I'm brewing in the kitchen. I even have her drinking out of a glass,& learning colors & smells! This is gettin fun!
TrueBrew
Yeh I was waiting for the missus to get cranky about the mess and aroma in the kitchen last night when she got home. Unbelievably she goes. "What's that beautiful smell?" I had to agree with her [biggrin] Lucky, as it was all through the house. I filled the fermenter in the shower so our bedroom had it as well as the kitchen, dining and living room lol. If she didn't agree, I would have been in deep so and so. She didn't clean up the mess for some reason though [rightful]
Anzacpaul
Mega bump, as this thread is relevant. I have hops that I need to use up. 50g Willamette 50g Cascade 25g Amarillo. Also have 500g chocolate malt 300g crystal malt 100g midnight wheat 2 cans LME us-05 Anyone make a cracking brew out of that using your choice of base can? Need something to drink in the couple of months whilst my stout and belgian are maturing.
botanical
Why not try an os draught and a steeped hopped tea the day before bottling . I like working with the kiss theory myself. Cheers Greenie

Otto Von Blotto
A hoppy dark ale, that sounds pretty interesting. I reckon that recipe would work pretty well actually. There's a thread on here somewhere about a Cascadian Dark Ale. I think Chad and Lusty have brewed something like this. Whoever it was, from what I recall it turned out really well. MikeC1525229119
Hi All, sorry to hijack this thread. I also have some left over hops and would like to make something. 25gm Gallaxy 50gm Mosaic 50gm Amarillo Any ideas what I can make with these options? I have just put down a Galaxy Pale Ale so the Gallaxy will be used up when I dry hop this. Leaving me with the Mosaic and Amarillo. I currently only have the Craft FV and looking at getting a larger FV in future. Thanks all. Mike

Mike[/quote'] Keep an eye on out Gumtree for a larger FV, I always see "unwanted gift", "used once", "opened but never used" etc kits for sale for under $40. As for what you can brew, you could make a hoppy ale with both the remaining hops, i'd be tempted to give the Amber ale can a go, using the hops accordingly whether in a boil, dry hop or tea before bottling. Amarillo is a my favourite hop, that aroma

Amarillo is a my favourite hop, that aroma Thanks Paul, I do have an old 30L FV that has to been used in a very long time. I guess I could give this a good clean and sanitse before using it. Also think it need new seals. It is one of the old ones with an airlock. Do you think this would be ok? I want to start using grains and eventually move to BIAB. Do you have any recipes for 23L brew with these hops? keen to chuck one down after my Galaxy Pale Ale is done. Great info as always. Cheers, Mike
Otto Von Blotto
It'd be ok re the seals unless they've perished or dry/cracked. Wouldn't worry about the airlock one though, a piece of tape over the hole in the lid works fine. I started doing that with mine when the grommet perished. I just don't fully tighten the lid (although even when I had the airlock and did fully tighten it, the thing never bubbled). Other than that I suppose it depends on how well it can be cleaned and sanitised. Might be easier to just get a new one, they only cost about $30 from a LHBS. Anzacpaul
Should I boil a bit longer for flavour considering I'll get the aroma form the dry hop?
Beerlust
Hiya Kelsey & Anzacpaul. A hoppy dark ale' date=' that sounds pretty interesting. I reckon that recipe would work pretty well actually. There's a thread on here somewhere about a Cascadian Dark Ale. I think Chad and Lusty have brewed something like this. [img']unsure[/img] Whoever it was, from what I recall it turned out really well. I'm not sure exactly what zone Anzacpaul is targeting with his recipe but the Cascadian Dark Ale is a Black IPA. Chad swears the Yanks stole the recipe from Canada & changed the name to 'Black IPA'. I back Chad, so I use the name he told me it is. I simply darkened Chad's Big Island IPA recipe & upped the hopping rate a bit to compensate for the increase in malt derived roasty flavour. My recipe used the Real Ale kit for the base. At approx. the same time as I was doing this, another forum member 'Muleyinoz' was attempting a similar thing using the Dark Ale kit as a base. Muleyinoz's Cascadian Dark Ale thread. If you deem it relevant, I hope his recipe gives you a few ideas Anzacpaul. Cheers, Lusty.
