Canadian blonde with honey malt

I'm conjuring up a recipe that goes like this;

 

1.7kg Canadian blonde beer kit

1kg Light dry malt

300g honey malt steeped for 45 min

250g Dextrose

 

The question is should I add some hops? I have a fairly good assortment in the freezer...

 

Cascade whole leaf hops

Amarillo whole leaf

Northern brewer whole leaf

Mt. hood whole leaf

Sterling whole leaf

Golding whole leaf

Saaz pellets

Willamette pellets

Hallertau pellets

Fuggles pellets

Cascade pellets

 

Any advice on what would go nice for a hops addition would be greatly appreciated [biggrin]

hi slurtis,

 

i brewed a can.blonde toucan a while back with 500g wildflower honey. i used 42g cascade at 5mins and another 42g cascade dry hopped. it is really nice. quite strong in both ABV% and hoppiness.

 

i also brewed a can. blonde with 566g LME (amber) and 500+ wild flower honey. the hops i used for that one was; 28g perle @ 50mins, 14g perle @ 20mins and 14g perle 5 mins. this one is a fair bit milder of course and wild that the honey is more pronounced.

 

they are both around two months old. they are both good drinking right off the hop, though.[biggrin]

 

i know you you were talking about honey malt and to be honest i don't even know what the heck that is,[annoyed] but i thought i might blab away to you none the less.[joyful]

by all means, man, come on up! we'll knock the froth off a couple, for sure. just make sure to bring along some of those hops you say you have.[biggrin] where are you coming in from?

 

my toucan goes like this:

 

Heavy Honey Blonde AVB 7.2%

 

23 L water

2 cans of Canadian Blonde

500g rocky mountain wild flower honey

42 g cascade pellets 2mins boil

42 g cascade pellets dry hop

15g cooper's yeast (i used a starter of 600ml of boil then cooled water with 4 tbls of dex) pitched @ 24C

O.G. 1.062

Canadian Eh!L, I'm In Cranbrook, and yeah gotta love the overwaitea (Save On Foods here) $11.99 sales! I'm going to put this batch down as per my OP and I think I've decided that willamette is going to be the hop, but maybe cascade. I think I'll just do a short boil and dry hop schedule, this beer should not be bitter, but more along the lines of a sleemans honey brown with a little different hops and less residual sweetness. At least that's what I'm aiming for[bandit]

I'm steeping the Honey malt in a grain bag as I type! 328 grams to be precise.

 

I'll steep for 1hr, remove the grain bag and squeeze all the goodness that I can out of it and proceed to boil the rendered wort for an additional hour (to prevent chill haze and ensure there is no live bacteria going into my brew.

 

At the 50 minute mark of my boil I'm going to add 15g of willamette pellets (in another grain bag). I'll add the resulting sludge directly to my canadian blonde kit and 1kg of Light Dry Malt. I'm going to fill to 23 liters and dry hop an additional 15g of willamette pellets. Pitch yeast and wait. I'll post the OG when I'm done mixing it all up, any wagers guys? [biggrin]

My LHBS sucks the hind tit!
