I was thinking of putting down the following: 1x English Bitter can 1x Canadian Blonde can 500g Light Dry Malt 12g EK Golding hops boiled 15mins 12g EK Golding hops dry hopped Yeast supplied Made to 23L Opinions? MichaelW14 Posted November 26, 2010 Share Posted November 26, 2010 I don't normally do 2 can brews, but have just thrown together a Coopers dark ale & a Cascade spicy ghost, dry hopped with some fuggles. I've just bought a Coopers Mexican Cervesa can and a Coopers Canadian Blonde can. Before I brew I'd like to see anyone's ideas of what I could do with what I've got on hand and temperature related ideas and duration. I have some leftover dex. 200g I'd like to get rid of and some Cascade 22g that I will probably use up in a dry hop, post fermentation 'lusty' style. Made to 23 litres, pitching both packs rehydrated. 16'C pitch and maintain until day 2-4* Raise to 19'C until day 8* Cold crash at 0'C and bottle day 14* & Dry hop day 6* to 8* Any input, suggestions, advice or criticism would be greatly appreciated. Scottie Posted June 23, 2018 Share Posted June 23, 2018 Hey Lee I reckon that will go alright. The Mexican is a pretty neutral kit and I like the Canadian which a Cascade Dry Hop goes well with. I am not a fan of the hybrid yeast that comes with Mexican (you might want to check that its still the lager/ale combo) however it should be OK if you can hold 16 degrees. It's a take on the Coopers DIY Extra Strong Vintage Ale recipe. That beer (& all it's mods) are outstanding for a kit based home brewed beer. Cheers, Lusty. Well this Toucan was made as above except the dry hop was not done in the end. It's been ageing for 35 days now, the last two weeks it has been in the fridge. Not a bad drop really, its quite bitter which I like and I'd have to say its getting smoother as the weeks go by. Reflecting on it now i should have dry hopped as it is a bit boring, but by no means bad. Its got good carbonation and head retention and leaves thick ladders down a nice clean glass. I did another toucan immediately after bottling this one, it was a o.s draught can, Mexican cervesa can, 200g dex to 25 litres with the 20g dry hop cascade. It's not exactly a toucan, but a half size batch using a full real ale tin, so its sort of a toucan I suppose. 1 x can of real ale 500g LDM Hop tea of 25g each of Centennial and Citra 12 ltrs Rehydrated kit yeast. Dry hop of 25g each of Centennial and Citra. It's very nice. Holds a head like no other beer I've made and is similar in taste to a Cooper's ESVA. Came out at about 6.5% in the bottle.
