If you are making the Coopers Irish Stout can and are trying to mimic Guinness, don't add any. Stouts are all about the malt and usually only have a bittering addition (no late hops). But as a home brewer you can suit your own tastes. If you do add late hops, I would not go overboard: you could steep 15 grams or so in hot water for 20 minutes. I am sure other people with have other suggestions. In my opinion you don't need to add specialty grains to this kit. Just mix with 1kg of light DME, or the Coopers recommended Brew Enchancer 3. You could use 1.5kg Amber LME instead, but then you'd need more yeast (Safale S-04, rehydrated). Good luck, Christina. Link to comment Share on other sites More sharing options...
Ocean's of Ale- Posted March 11, 2018 Share Posted March 11, 2018 Hey stout lovers I stumbled across a Guinness stlye beer similar to waylons, i was going through a toucan faze at the time I used; 1.7kgs of Cooper's australian pale ale 1.7kg of Cooper's irish stout. Both kit yeasts - (no hops as the toucan is quite bitter as is) ... l called the batch an ex-pat or pale patty or something. ..not saying it was Guinness draught but a stouty ballpark !
