I bought a 15L fresh wort pack from my LHBS and am going to brew an IPA with it tomorrow night.

 

Black Cat Wort (by All Inn Brewing Co) grain & hop schedule.

Pale 55.6%

Dark Munich 20.8%

Munich 13.9%

Carafa III 4.2%

Chocolate 5.6%

Magnum @ 22 IBU

 

Black C-C-Cat IPA

15lt wort with 25 minute boil

Centennial 20g @ 25 min

Citra 20g @ 25 min

Chinook 20g @ 5 min

Centennial 10g @ 0 min

Citra 10g @ 0 min

Chinook 10g @ 0 min

Centennial 30g dry hop

S-04 yeast

20L brew

 

The hop schedule is as per a recipe from my LHBS, kinda. Their recipe had Nelson Sauvin instead of Citra but I already had an unopened packet of Citra in the freezer. I have no idea how this is going to turn out as I haven't used ANY of these ingredients before but oh well. Nothing ventured - nothing gained.

 

With regards to the dry hop, I picked up one of these infusers from a tea shop. Is this what some people use?

I haven't used ANY of these ingredients before but oh well. Nothing ventured - nothing gained.

 

 

That will be superb. IF it was me I would not use S04 or the ball thingy - I don't like S04 and I don't see the need for the ball thingy, as I never have hop floaties or any other such problems.

I have tried those infuser thingies (exactly the same as the one pictured) and don't like them.

 

They may be ok for very small amount of hops (<12 grams)...while you may fit 20-30 grams of hops in it, when the hops expand (and they expand a lot!) I reckon would effect the hops ability to get into the brew.

 

If they were say double the size, they would be ok I think.

 

I use a large hop bag for my dry hop additions these days.

Thanks gents. I haven't had any problems with hop floaties in the past either but I rarely see a tea shop in my neck of the woods so when I did find one I thought I'd get one for the hell of it haha.

 

Ben - I originally got the S-04 for another brew I'm planning (LC Rogers clone) so I can hold on to it for the time being. The other yeasts I have on hand are:

 

- 14 g Coopers ale yeast (2 x sachets)

- MJ's M44 US West Coast yeast

 

Apparently this kit dials in between 5.5% - 6% ABV. What would you suggest?

I tried an Ella pale ale today.

1.7kg Aust pale ale tin

1kg DME

250gm of BE2

250gm caramalt steeped 30 min @68

 

Ella 20gm @20min

Ella 20gm @0min

21 Litres

15gm US-05 (that's how keg king pack it)

OG 1050

pitched @20 deg

 

My first go with Ella, I'm not planning on a dry hop, but will take advice.

Update on the Strong Ale:

 

SG at 1017

 

 

Activity is slowing and hopefully it will settle down so I can bung it soon unsure

 

The mopped up foam carries particularly overt "PORT" aromas so I'm wondering whether I should have given the the keg a couple of extra rinses with hot water??

 

What could possibly go wrong...

 

C'mon PB2. You can't leave us all hanging now. I'm absolutely intrigued by the idea of using an old port cask. Were you able to bung it yet? And I notice the mailman has been today and there was no invitation to the cask opening and tasting. Maybe it'll be in tomorrow's post. happy

 

However, please keep us informed of your progress.

After some tweaking I put this down last night:

 

3.4 kg Blackrock Ultra Light LME

250g Crystal 60

250g Victory

50g CaraPils

500g Dextrose

20g Magnum @ 60

20g Citra & 20g Cascade @ 15

20g Citra & 20g Cascade @ 5

25g Citra & 25g Cascade Dry Hop

 

I haven't got my numbers with me' date=' but I think I was looking at around 1.061 SG and around 62 IBUs. It smelt good as they always do, I am looking forward to this one, think it will be a nice drop. It's supposed to be an American Style IPA

Replying to myself, only way to get good conversation these days!

Jesting aside, I have just bunged in the dry hop, I ended up going with 25g citra and 30g cascade...because i accidentally poured too many cool. I took the opportunity to take a gravity reading, then taste it, and YUM! love. Once the dry hop kicks in this should be a REALLY nice drop. I'll report back once she's kegged and carbed.

Hey gang

What do you know? I too put done an English style IPA on the weekend. Mine was unintentional' date=' though. I was going for a ESB but would seem that I slipped a extra Kg of base malt into the mill which took my expected OG from 1.054 to 1.061. Luckily I use a refractometer to check my pre-boil volumes and was able adjust my hop addition to balance the extra malt.

 

The brew was:

4.0kg ESB Malt

5.0 pale malt

.75 victory malt

.5 crystal 60

30g fuggles FWH

29g nugget 60'

15g fuggles 45'

12g fuggles, cascade and hallertau 0'

42L

WLP005/notto[/quote']

Here's another update on this this brew. This is the second batch of 2 that I fermented this time with WLP005 @ 23C and dry hopped with 40g Styrian Goldings. I was looking for some banana esters from the warmer ferment temps. and I got them.smile

 

This beer is AWESOME!! It's got everything I might want in a nice IPA. It's rich and malty/bready, has a good hop bite and aroma, banana esters to make it nice and British and a warm alcohol feel that every IPA needs.love

 

The Nugget and S. Goldings are new hops for me and both preformed very well and will become regulars for me. The WLP005 is also a winner and would choose it over WLP002.

Well considering the fermeezer takes two FV's, I figure another lager should go on at the same time.

10g Calypso hops @ 10 mins

20g Calypso dry hop

Wyeast 1272 American Ale II

23lt brew

 

Obviously I was going to make the Caribbean Siesta but I couldn’t get my hands on a Cerveza tin believe it or not, oh well. This will be my first time using a liquid yeast so I’m interested to see how that goes.

I know, let's get a brew down! biggrin

 

Time to play with some new hops. Ahtanum & Ella.

A very popular IPA over in the UK atm is this Brewdog Punk IPA. I'm going to make an APA & sub a couple of the hops listed there for others with similar properties. Using the Ella & Ahtanum should also give me some ideas on perhaps how to go about replicating the Beechworth Pale Ale that has been a topic of interest here on the forum of late.

 

Coopers Liquid Light Malt Extract 1.5kg

Light Dry Malt Extract 500gms

Dextrose 100gms

Barret Burston Ale Malt grain 500gms

Dark Wheat Malt grain (13-14 EBC) 250gms

CaraHell grain 150gms

Medium Crystal Malt grain 50gms (purely for colour adjustment)

Ella (14.3%AA) 15gms @ 45mins

Ahtanum (4.6%AA) 20gms @ 20mins

Nelson Sauvin (11.5%AA) 10gms @ 10mins

Columbus (13.9%AA) 20gms @ flameout

Ella 10gms @ flameout

Ahtanum 10gms @ flameout

Ella 15gms dry hopped

Ahtanum 20gms dry hopped

Nelson Sauvin 15gms dry hopped

US-05 from stored rinsed yeast. 1 litre starter.

Brewed to 23 litres. Ferment @ 18°C.

OG = approx. 1.043

FG = approx. 1.011

EBC = 8.5

IBU = 32.3

Bottled ABV = approx. 4.5%

 

That should spit out something interesting. wink

I have looked at your last few recipes and thought w00t.

 

Nobody could accuse you of subscribing to the theory that less is more lol

 

While a lot of dudes are going SMASH you buck the trend and go FHAMM wink

 

I reckon that Ella is a great hop and I have put down a few fine brews with this one.

 

Stella IPA --- 50g of Ella into the Coopers IPA

Southern Cross Pale Ale --- 50g Ella and 25g of Sylva in Coopers Malt Extract & Victory Malt

Ella Moteuka IPA --- 60g Ella and 40g Moteuka in Coopers Malt Extract & Carahell

Hiya Scottie.

 

I too have read a number of your recipes & subsequent posts about Ella. So it was about time I gave it a try. I like experimenting with new ingredients, particularly hops, & I like to throw good portions of the stuff into my pale ales.

 

Last week I put down a Redback wheat beer clone that only used 30gms of hops. I was nearly crying standing over the start of the hop boil knowing I could only throw 30gms of hops into it! cryinglol

 

The best tasting pale ales I've bought & brewed have used combinations of numerous hops to create the flavour. When you get it right, they are simply beautiful beers to drink. Hopefully something floral with some light citrus & piney notes will come of this.

SWMBO and I are finally doing another brew day this Saturday and I've come up with this simple American pale ale recipe to brew.

4.00 kg Pale Malt, Maris Otter

0.50 kg Munich Malt - 20L

0.25 kg Cara-Pils/Dextrine

0.25 kg Caramel/Crystal Malt - This is my home made crystal malt so not sure of the specs, looks somewhere between medium and dark though.

 

Hops

10.00 g Magnum [12.20 %] - Boil 60.0 min

20.00 g Centennial [10.00 %] - Boil 30.0 min

25.00 g Chinook [13.00 %] - Boil 10.0 min

1.0 pkg Safale American (DCL/Fermentis #US-05)

 

90 minute mash, 10 mins mash-out and 75 minute boil.

 

Should yield about 26 litres which is my usual amount.

 

Est Original Gravity: 1.047 SG

Est Final Gravity: 1.010 SG

Estimated Alcohol by Vol: 4.8 % (5.1% bottled)

Bitterness: 38.3 IBUs

Est Color: 16.7 EBC

 

This will be put into the FV around September after the lager I put on on Tuesday is bottled. We will probably do a couple more brew days before then too. Looking forward to it though!

Brew day Weekend. Back to back!

 

I'm a bit late on this post.

 

I put down 90L of wort this past weekend. 2 batches of Gold Nugget IPA and Honey brown Ale.

 

Next weekend will be the same drill, different beers. Pale ales of some sort.unsure

 

I gotta' make some beer fastunsure. I gotta' friends wedding to brew for in a month from nowcrying

I had a very small window of opportunity today so I put on a Kits n Bits brew. I haven't done one of these for a few years since i started playing with extracts and then all grain, but time was not on my side today.

 

I put on an old fav of mine. My take, on the Dr Smurtos award winning take, of Boonies LCPA clone. This was a tasty drop back in my Kit days so I hope I still appreciate it. It was fun to smash out a really fast brew again.

 

1 can Coopers Draught

1 can Coopers Light Malt Extract

250g caramalt steeped

20g Cluster pellets @ 15 mins

20g Cascade pellets @ 15 mins

US-05 yeast

 

Made up to 21L

 

Then she will be dry hopped with:

20g Chinook

Ha ha ha, to me that seems like a lot of effort, and about all I am prepared to do with my commitments, but I have been really pleased with what I have been making lately, so each to his own.

 

BTW why has antiphiles avatar changed to VALE? That usually means someone has passed.
