Hairy
Get a room guys, even if it is a chat room There is too much love around here Anyway, I bottled the amber ale inspired by Lusty's Mosaic Amber Ale and, out of the FV, it tasted really, really, really nice. I am looking forward to this one. PS. Chad, this thread does seem to be getting a little slow. Perhaps we should start a new one each year. Brew Day!! Watcha' got, eh! 2015. antiphile
It's probably good to follow Ben the Stufu master. I need to replace the infectious 80/- I lost a week or so back. Having never used or heard of Azacca hops' date=' I looked for some info on it. Azacca properties: One source describes as "Intense and tropical. Sustained impressions of citrus and very ripe mango, with notes of orchard fruit (pears, apples) and pine needles throughout". Otto Von Blotto
50.00 g Cascade [5.50 %] - Boil 60.0 min Hop 13 15.8 IBUs That's a really low IBU number for that amount of hops and boil time. Must be all that malt you've got in the recipe there.

I'd be curious to see a picture of your brewing set-up. If you would, on your brew day. G'day Chad. Geez I'm glad you asked that question, because when I was looking I noticed I posted one of the profiles I used in testing (which was a PA/IPA water target profile). I've changed it now to the proper one, and the recipe is now: Ingredients: ------------ Amt Name Type # %/IBU 60.00 l Scotch Wee Heavy Water 1 - 3.34 g Chalk (Mash 60.0 mins) Water Agent 2 - 2.60 g Calcium Chloride (Mash 60.0 mins) Water Agent 3 - 2.27 g Gypsum (Calcium Sulfate) (Mash 60.0 mins Water Agent 4 - 5.50 kg Pale Ale Malt (2 Row) (4.0 EBC) Grain 5 42.3 % 3.50 kg Golden Promise (6.0 EBC) Grain 6 26.9 % 2.50 kg Pale Malt, Maris Otter (5.9 EBC) Grain 7 19.2 % 0.50 kg Caramunich II (120.0 EBC) Grain 8 3.8 % 0.50 kg Wheat Malt (BB) (3.9 EBC) Grain 9 3.8 % 0.40 kg Cararoma (400.0 EBC) Grain 10 3.1 % 0.10 kg Roast Barley (1300.0 EBC) Grain 11 0.8 % 50.00 g Cascade [5.50 %] - Boil 60.0 min Hop 12 15.8 IBUs 50.00 g East Kent Goldings (EKG) [5.00 %] - Boil Hop 13 8.7 IBUs 1.0 pkg Newcastle Dark Ale Yeast (Mangrove Jack' Yeast 14 - I'm not using water profiles for a particular town, instead I got style profiles from the Bru'n Water Spreadsheet (top left corner of the Water Adjustment tab) and aimed for the Dark Malty Profile. I figured the easiest way to do it is to fill an empty FV with all the water I'll need (60 litres), adjust that to the correct concentrations, and then draw all water for brewday from there. I'll certainly take some pics, and I just need to remember to get Brunhilda to show me where she's hidden the camera so I can charge it up! All the best mate, and hope your recovery is now all continuing nicely without any setbacks. Cheers. Edit added: Gotta love the Water Profile Tool! You are absolutely right, OtBlot. I went through my garage rubbish bin and found the empty bottle of Cascade I finished over the weekend: it was rated at 5.5% alpha (or very close). I ordered another 250g yesterday along with lots of other stuff, and the new one is 7.6%. This will add nearly 22 IBUs instead of 15. Thanks for the heads up, mate. I've looked before a few times and never found them. Maybe it had something to do with the missing "H" in this versions title.
Hairy
Edit added: Gotta love the Water Profile Tool! Phil, does Beersmith estimate the mash pH too?
antiphile
I don't think so, Hairy. Bru'n water does though. This showing how to use Beersmith 2 and Bru'n Water (24 minutes) explains it. Hairy
I haven't watched the video Phil, did you estimate or measure your mash pH? If you go to the trouble of working out water additions then you may as well check that your mash pH is in the ballpark.
Otto Von Blotto
I had another thought about the low IBU numbers from that addition - the size of the batch. Your batches are much bigger than mine. I brew 25 litres usually, and that addition in my red ale for example gave about 27 IBUs. If it was 40 litres it wouldn't give as many IBUs as it does in 25 litres.
