G'day,

I tasted a sample from my second brew after 2 weeks bottled and it is very flat and dead looking. I know that when I mixed the brew I inadvertently or missed the temperature and it went up to 40 deg C, I then set the FV into a laundry tub of cold water and bought it back to about 26 deg C. Do you reckon I killed it and should tip the bottles and start again?[crying]

A few questions. How do the hydrometer tests go? What was your FG? How did you prime your bottles? How did you store the bottles?

My SG's were,

1028-25

1018-25

1015-27

1012-23

1010-26

1010-24

1010-21

SG started at 1038 and ended at 1010 which gave a final alcohol content as 3.85%. I had some drops left from my first brew so used them up on about 10 bottles (put in after filling) and then primed the remainder with sugar before filling.

I stored the bottles in a bin (in my 40ft shed) that I move about to maintain a reasonable temperature, wrapping them in a blanket at night to keep the temperature up.

If the gravity continued to drop after you cooled it down then I would say the yeast should still be alive and kicking. Although others may correct me on this.

 

I've had a couple of brews that didn't carbonate after two weeks. What I have done is double check all the caps and make sure they're nice and tight so no gas can escape, give them a shake to rouse the yeast and try and keep the temp above 18. You can test how it's going every couple of days without opening the bottles as well by giving them a squeeze. As the beer carbonates the bottles will get harder.

I agree with A-Tron. Follow that advice and see how it goes.

 

How long was the brew sitting at 40C and at what stage of fermentation?

 

If it was at that temp for a while whilst fermenting then it may not be the nicest beer.

Hairy,

The brew was probably at 40 for 15-20 minutes before it stared to drop. I have already order an India Pale Ale for a Christmas drop so hoping that will work ok. I'll keep an eye on it and give it s stir up now and again and do another sample in a couple of weeks
