PB2 Posted February 8, 2016 Share Posted February 8, 2016 When brewing tiny volumes that we do and assuming the beer is not fermented under pressure, the temp of the beer, at any point during fermentation, has little to no influence on final carbonation level. Greater influence comes from: - the amount of residual sugar in the brew, - the amount and fermentability of priming sugar added, - the presence of organisms other than the pitched yeast and - whether the yeast releases an enzyme to break down the maltotriose (something thn can occur with beer stored for longer periods The last point is something that we don't have a lot of control over. This is why you will often find that naturally conditioned commercial craft beer is overcarbed, even gushing, when opened. Based on that info, as mentioned previously, I'll halve the priming rate (1 carb drop per 750ml bottle) for most of the bottles in the Porter batch, & hand measure some different weights of sugar for 1/2 a dozen of them or so to draw some comparisons. I'll be brewing a stout soonish, and I will keg most of it but for the bottled portion I think I'll go with 3/4g per litre dextrose for the priming, and see how they go after 6+ months. If so, what did you think of it? Forget my malt bill listed in the link as it is just something that has worked well for me around what I think this beer presented. Complete guesswork there. I am interested in your take on my yeast selection & the hop schedule I have set down for the brew primarily. There is very little information out there on this beer & what I have found & read, I thought hid a few of the facts. Beerlust Posted January 29, 2020 Author Share Posted January 29, 2020 (edited) Hi guys. I was informed earlier today by my local Coopers rep that the great PB2 has officially retired. To what capacity, I'm still waiting on confirmation. Whether that only includes his physical presence at the brewery for certain functions only, or whether that includes & extends to his involvement as a moderator & contributor on the Coopers DIY "Community" forum, I am still awaiting clarification from Coopers. I checked the log & PB2 hasn't made a post since July 31st 2019 on the forum, so my gut feeling it is most likely complete retirement. As none of us have heard anything from PB2 since his 3-4 month holiday late last year (that I'm aware of) it would be nice for him to say hello, & allow many of us to say thank you for everything he has done to help create the MASSIVE Coopers DIY community & make better brewers of all of us from his teachings & advice that have been passed on from brewer to brewer. A part of me hopes PB2 will continue to home brew & contribute on the forum. As part of his transition to normal human status, I can actually give him a bit of $#!t from time to time without the fear of retribution now! LOL! If you're out there & listening PB2, the microphone is yours & I'm sure we of DIY community would love to hear from you (at least one last time). I'm pretty sure PB2 isn't a 2nd generation reincarnation of himself. He did explain how the PB2 thing came about once a while back I reckon. Some of our private conversations were absolute rippa's! At one time I did make it very tough for him as a moderator (that one time at band camp is all I'll admit to PB2!) & I'm sorry for that, but he always treated me fairly & eventually over time you do build up some sort of rapport, respect & understanding of one another. It's interesting in retrospect, as the forum has gone through many changes & rebuilds in my time as part of it. Maybe 3 or 4 or 5 rebuilds....there's been a few. I reckon if the original forum had the "likes" function available back when PB2 started on the forum he'd probably be in 6 digits by now such has been his impact via the forum on the DIY front.
