TonyN3 Posted October 21, 2013 Share Posted October 21, 2013 G'day fellow brewers, I'm new to the brewing scene and am currently got my 3rd brew in the fermenter right now. First 2 (draught & real ale) were awesome, although i did forget to put carbonation drops into 1 bottle. Have pale ale brewing right now, i use a kilo of standard sugar with it and thats all. Stick around and you should learn a lot (probably not from me though) [biggrin] First tip is to use quality ingredients and to design your recipes well. With your current batch I would have reduced the simple sugars and replaced it with dry/liquid malt. Perhaps a kilo of light dry malt and 200g dextrose. This will give the beer a bit more body and reduce the cidery taste you can sometimes get from too much simple sugar. The other tip is temperature control. A general rule is to ferment your ales at 18-20 degrees for a cleaner ferment. Some yeast and styles may call for a higher temp but this is a good rule to start with. Later you can start experimenting with hops, grain and yeast but the above should get you making better beers in no time at all. Good luck with it.
