It signals the end of the cold weather, daylight saving approaches and as the plant life sprouts, the air is full of pleasant scents, buzzing bees and optimism. The Melbourne Cup also signifies the start of the Australian "Silly Season". The non stop pi$$ up commences. The office Christmas parties begin, where g-string panties are found on the photocopier the next morning and general silliness prevails. Along with a few sackings :-) In anticipation of the the Spring Racing Carnival, I've put down something to match the season. Bright, spritely and with an in your face aroma. Something that matches the spring in full bloom along with the infectious optimism of a $6 box trifecta for the Big Race. 1 x Coopers Pale Ale Tin 1 x 1KG Light Dry Malt 2.5L water brought to the boil with 250g of BE2 15g Galaxy @18mins 20g Cascade @15mins 15g Galaxy + 15g Cascade @5mins 5g Galaxy + 5g Cascade @ flameout Steep 5 mins US-05 Yeast at 24 degrees (18 degrees in 9 hours) 25g Galaxy + 25g Cascade Dry Hopped ________ What are you guys doing for a Melbourne Cup Special Brew ??? I love cascade and galaxy and I have found a 2:1 ratio of cascade to galaxy to be perfect for my taste.
