Brew Day What Have Ya Got - 2023

Brew day today and it was a hot one, outside temp hit 33.5° but I think that is was hotter in the brewery having a vessel heated up and boiling a lot of water - I need A/C in the brewery!!

Maris Otter 78.3%, Carapils 8.3%, rye 8.3% and wheat 5%. 15g Magnum @ 60, 15g Simcoe cryo 15 min hopstand, 15g Super Pride hopstand. It will be dry hopped with Sincoe cryo and Super Pride. Nottingham will be the yeast for this batch. The batch has been cubed and will be in the fermenter tomorrow. Predicted IBU 28, EBC 9.1, BU/GU 0.55 and ABV of 5.1%. Hit the predicted OG of 1.051.

I don't think you will be disappointed with the head & retention on that beer @kmar92, sounds superb.  Please post a pic when its in the glass, just for all of us.

@kmar92, I am in the 'Homebrew Network' facebook group. A lot of their members are posting photos of brewing outdoors in the snow. Also a lot of photos of basement brew set-ups - fascinating!

The homebrew Network while it maybe Australian based   and ran By Gash)  The homebrew network has a world wide following
and seeing them in cooler weather  brewing in the snow i reckon that would be fun

I agree, it's a great site, loads of information & he started following me on Instagram as I did him. Pretty interesting bloke.

Yep, yesterday I wished that I was brewing in the snow, but alas in Aus you have to sweat it out as I did.

Full extract boil on a Tuesday night. Got me some Zappa hops the other day. The LHBS guy said try these as a flavour and aroma hop. His last recommendation of waimea hops wasn't all that good but have given them a go anyway. 

"Zappa™ is described as having unique spiciness, coupled with full on mango, backed by a sharp citrus, delightful savory and strong deciduous pine characteristics.

Zappa™ is a native, NorthAmerican, Humulus Lupulus var. neomexicanus, recovered from the wild in New Mexico."

I can tell you. After my whirlpool it smells like cut grass. Hopefully verdant accentuates it's good characteristics in the ferment and dry hop and I get something nice.

Yep I just made my first wheat beer with this yeast and at about 4 weeks in the bottle it is an absolute belter. Very happy. It has cleared up really well, but it’s supposed to be a Hefeweizen so I gently roll the bottle prior to opening to get some yeast in suspension. 
It did try to climb out of the FV though (brewed at 22).

Interesting @Tone boy, most Wheat Beers I have done have done the same (jumping out of the fermenter).

I am gonna brew this around 19 degrees to see what happens.

Brew day today, another COPA but this time some tiny tweaks.  This brings up batch # 100 AG # 57 since I started brewing again a few years back so it's a bit of a milestone today.

I upped the CPPM to 4000 g, upped the wheat to 250 g and upped the Crystal Light (88) to 80 g.  On the hop side of the equation, upped the aroma hops to 30 g of PoR instead of the normal 25 g.  After the boil I deliberately held the wort at 80 C and dropped in these hops for 20 mins then removed them and did the 'old coffee plunger' trick.

Mash was still the same profile 45 C for 20 mins then 63 C for 60 mins and finally a mash out at 75 C for 10 mins.

OG = 1.044 FG predicted = 1.008 so ABV % = 4.7 EBC = 8 and IBU = 24.

Got an FV of the previous batch of COPA at end of CC and it will be kegged tomorrow.  I am running low on MT kegs ha ha.

Did his COPA AG recipe and hit all the numbers pretty much - so I made beer in the end. Can't wait to ferment it and have a taste.
