Went fishing - caught fish (redfin and a cuppla carp) marinaded in Thai herbs and spices with heaps of salt and oil and then dried in the sun on racks.

Smells amazing. Snapped fried a couple and the result is just beautiful - even the ol' carp has come up alright.

@Mickep I had a thai dry curry today, very nice. No pics as we has to get out for an open inspection so I was in a hurry.
Chicken, tofu and veggies.

For those interested it was a red paste cooked down with stock and without coconut cream. I bought the paste - I have made my own - as I was time poor. I used tofu and chicken that I cooked yesterday for a laksa in chilli, galangal, ginger, lemon grass, kaffir lime (all from the yard) and garlic. Really figgen nice.

Friday night is normally takeaway night in our household but I suggested I make some home made spring rolls instead.

Bit of a mistake on my part as I was doing an AG brew day of another COPA and sort of loaded myself up a bit with the jobs list.  Anyway marinated some pork mince and stir fried it in garlic infused peanut oil.  Chopped up some shiitake mushrooms, celery, bamboo shoots, water chestnuts, onion, wombok cabbage and stir fried those and then added back the cooked pork.  Stirred in a bit of cornflour / hoisen sauce / water mix to thicken and then let the mix cool down in the fridge before wrapping and deep frying.

The mix in the bowl does not look very appetizing but have made these hundred of times and you just cannot get enough of them.

Dipping sauce was homemade sweet and sour and also a store bought hoisin which was a bit ordinary (I usually make my own hoisin).

It is not too many years ago when lamb was a very reasonably priced meat, at least here in Australia. A leg of lamb roast was a great and reasonably priced meal, however these days it is a different story. Anecdotally I have heard that the sheep industry employed some high powered marketers to improve the image of lamb meat etc, and seems that they were very successful.
