Crystal Malt how to use

I am using 300 g crystal malt and 300g sugar with  can of Coopers Pale Ale, for 23lt brew.

How long should I steep the cracked grain, and at what temperature?

At present I am putting the grain in a nylon stocking, knoted and fully immersed in 4 lt water at 70 C . It is prodded and squeezed for 10 minutes.

I am pleased with the result, am sure it can get even better and more malty with better technique.

What does this do?

I've steeped a few grains but never boiled after, just wondering what i'm missing

Sterilises it and gets rid of the nasties that live on the grain (lacto etc). Not boiling leads to a greater chance of infection.

I've done quite a few XPA-clones and just steep the LCM in 3L in the fridge overnight, then a quick boil to add the hops. Comes out very nice. 😄
