It s a red Io, with the extract of a plant that grows in our Patagonia called Saúco. I was kinda worried because the fg was too low, 1005 and I never had such a measure.... But it turned out to be the most spectacular one I've ever brewed.... Nice head, colour, taste, aroma..... Unluckily here in Argentina the temp is around 36°...and I might have one of 2 problems: Either my drinking glass has a hole at the bottom.or the temperature makes my beer evaporate! If I'm not mistaken it's the plant that produces elderberries and it's science name is Sambucus. I assume this an ingredient in the liqueur Sambuca. I reckon @mrchino73's latest creation could be a very interesting beer. Would you care to share your recipe for the benefit of others? 1

Malts: 2 k pale malt 2k Vienna 400g Cara 15 200g cara 60 200g Oat Hops: 20g Cascade (bitterness) 10g Simcoe (flavour) 30g Amarillo (aroma) Yeast (US-05) Adjunts(natural saúco extract 500grs) 2g Irish moss 2g beer gelatin Process: Mash:62°-65° 90 min Boil: 60min Hopping: 60 min bitterness 15 min flavour 5min aroma Fermentation: 7-10 days 18°-23°c Add the extract 48hs after fermentation started. OG 1053 FG 1005 Colour 19.3 EBC IBU 30 Think it's the complete recipe. As I said before,please let me know! Thank you again for letting me help all of you! Regards. mrchino73 Posted November 24, 2021 Author Posted November 24, 2021 Don't know Catarina Sour, but I can assure you that this beer it's NOT sour! It's an IPA, so it's bitter,but the Saúco extract balance it and makes a very tasteful one. 1

I started withe the coopers kit,but had a very bad experience ( not Coopers fault,have to recognize that)...that's why I took the all grain lessons. Only one day, 6hs....and learned everything needed. Already had the fermenter,so I only had to buy 2 boiling pots.... 2
