Spursman
Thinking of doing this in a few weeks. Do you reckon I should change out the package yeast for my favourite Dubbya? Coopers say to ferment the kit yeast at 21° but I want it to be a lager so Dubbya at 12° would be a better alternative?

Dubbya at 12°C would be a most excellent choice. The yeast that comes with the Coopers Mexican Cerveza is an ale/lager blend. However, at 21°C, I imagine that the ale yeast properties would be the most noticeable.
