@MUZZY Hey there Muzzy - there are a few variations on the theme - this is one that young MEP @Mickep and Culinary Team put together not that long ago ; )

The vinegar/sour/pickley stuff e.g. lemon juice and lime juice and salt and sugar all comes together to 'cure' it so it is not quite raw in the end ; )

Reverse-seared pork rib (only two chops, the chook was for the ladies of the house). The weed burner isn’t bad for getting the Maillard effect when the meat is a funny shape. Unfortunately you can only get majority butane gas, with some propane. If I could get 100% propane it’d burn hotter but small cans of propane are banned here. You get big ones for cooking but I’d have to lug it around on a trolley or something. 
Since weedkiller has pretty much been banned in Europe I might have to go for the napalm option (propane bottle on a trolley) for getting rid of weeds: the weed burner could double-up as the steak-searer.

I’ll Easy to get the budget for that one past the Head of Leisure Activities, being a (mainly) veggie 🤣

Rib Eye Fillet Steak tonight, I like mine medium & this was 63c so to me it is perfect.

I didn't really want chips again but you know 🤤 to some I know this would be over cooked but I can assure you this was as tender as.

The Air Fryer does a wonderful job with the chips with no oil, so at the end of the day they are not really that unhealthy.

Not pretty but yummy. Oven is broken here so don't cook the best

@stquinto, I had to google 'morel sauce' to learn that morels are a dried mushroom. I thought it looked like a dried plum. I love an onion and mushroom gravy made with 'normal' supermarket mushrooms. What do morels taste like please?

The price in Adelaide averages about $60.00 -65.00 kg For Eye Fillet ATM, you can of course get cheaper at Woolworths but not the same quality.

Hey Jenny, that’s actually a difficult question to answer 🤔

As they are dried they have a rich “musty” (but in a good way) flavour, and are a bit, well, mushroomy…

A lot of the taste comes from the cream and meaty paste I put in to thicken it. But I also put in some of the water I use to rehydrate them as that has a lot of flavour too.  I showed a photo of the amount I put in because there was a discussion about how expensive they are but you don’t need many. 
At the end of the meal I noticed my kids left them at the side of the plate… what a waste!
