BREW DAY!! WATCHA’ GOT, EH? 2021

Big beer day - Oz IPA about to bottled, and also a Brew A. That one is down to 1.012 but it still farts at me occasionally when I go past it, like an incontinent granny 😳

I tasted what was in the hydrometer and it is quite an alcohol-heavy brew. It’ll have to mature quite a while so I’m only putting 5g/l sugar in each 33cl bottle.

Alright... received a package from Yakima Valley this morning... so Brew Day!

That stuff is potent, nearly 50 ibu and so sticky and smelly.

The dregs are going in this brew, no idea how much so saying 10mL

Got the house Pilsner in the FV today. After some feed back  from some judges I’ve upped the bitterness by 5 ibu, bringing it up to 45 in totes. Also ditched a 20 min hop stand for a bigger 10min addition after I thought I got some slight grass last time round. 
 

Brew day went smoothly. Ended up with a good extraction and ended up 5points over on my FG. The three litre yeast starter will confidently bring my FG down to where it needs to be.

Noted mate. If it was on the kettle I’m wondering how much isomerised………..

I’ll be getting a couple of syringes and putting them in the mash to warm up. Then into the boil.

Yesterday I brewed the Landlord clone, and bottled two 23 litre batches ( Oz IPA and Brew A). All that I am sure ‘cos SWMBO was off at some yoga retreat of summat for the day. Amazing how productive a man can be 🙄

I’ve got my fingers crossed for the Landlord -it’s far too dark (60g Carafa III is too much), the OG was 1.055 instead of 1.044 - hope it doesn’t throw the beer off-kilter because those kinds of beers are not meant to be that strong , and on top of that the the Wyeast 1469 West Yorkshire kit never took off properly (I ended up pouring it all in anyway). 24 hours later no sign of life yet 😬

It’s a bit off to quote yourself, but it was bothering me so I went and added 2 litres of water to the brew. It’s at 1.042 now (should gave been 1.044, but I’ll ferment it down to 1.010 instead of 1.012). Great big krausen on the bugger too, so looking promising

Sorry mate didn’t edit that bit out🤣 just mash in at 71 and let it go for an hour giving it a stir every 20 or so and sparge 5 litres to make my volume for the boil don’t bother with mash out cause I had tannins once doing that dodgy thermometer I think so don’t risk it anymore. Sorry for the confusion.

Bottom Shelf: Micks Pacific Pale Ale - Morgans Pacific ale kit and Coopers Malt wheat extract liquid with Caramalt 150g (Steep) and a dry hop Galaxy/Cascade 2:1 ratio (30/15)grams. 24lt's - yeast US-05 slurry

Higher mash temp is good for body and reduces ABV. More non-fermentable sugars are created in higher temp mashes.

Saturday Brew - Hairy Nanny Mountain Goat Pale Ale

My Sister from the Country is staying with me for a while & wanted to see what a LHBS looked like & so we called in & she bought me a kit which sounds like fun to make;

1.7kg Pale Ale Extract

Brewblend ( 75% Dextrose  25% Maltodextrin )

Safale S04 

Goldings x 15gm

Although I am not keen to use the Brewblend containing the Dextrose I may have to to attain the lighter colour.

I have a spare 1kg Light LME but that will make it darker so still undecided.

I have read that Chinook is used in some Pale Ales so I was thinking of adding them as well as the Goldings. 

Any thoughts.

Looks a nice brew with both hops @Classic Brewing Co

Why did the LHBS give you US-04, I would have gone with US-05 ? I use US-05 in most of my Pale Ales.

Ive heard the US-04 stalls a bit, though more experienced brewers may clarify this. 
‘Just something to be wary of. 🤷‍♂️🤷‍♂️
