Coopers DIY Beer Team Posted October 23, 2020 Share Posted October 23, 2020 On those rare occasions when you've got volcanic krausen action, clipping the lid to the collar allows the whole assembly to piston up and down in the vessel, effectively adding another five litres or so of headspace. Without the clips, the foam can potentially push the lid off, resulting in a mess to clean up and an increased risk of spoilage organism and oxygen ingress if it's not caught early enough. Mine didn't. This is only a guess. But I had a heap of water cooled down in the fridge for this brew. Once I mixed it all up, added the cooled water it was at 19C, which from memory is the temperature they say to ferment at. Never really took off at.
