Temp settings for fermentation fridge

On those rare occasions when you've got volcanic krausen action, clipping the lid to the collar allows the whole assembly to piston up and down in the vessel, effectively adding another five litres or so of headspace. Without the clips, the foam can potentially push the lid off, resulting in a mess to clean up and an increased risk of spoilage organism and oxygen ingress if it's not caught early enough. Cheers!

The Russian Imperial Stout I did, almost got to the underside of the lid, with the krausen collar on.

Mine didn't.

This is only a guess. But I had a heap of water cooled down in the fridge for this brew.

Once I mixed it all up, added the cooled water it was at 19C, which from memory is the temperature they say to ferment at.
Never really took off at. I think I posted a pic somewhere on the forum of it at the time.

The 55 second mark of this video suggests the collar actually does move but I imagine it's only during highly active ferments.

I’m not sure I want to see that kind of activity in my fermenting fridge
