Mine usually gets transferred around 85/86 degrees, and loses a few degrees during the transfer, so it's still sealed up above 80. I usually don't manage to get all the air out because the handles are hollow and there's probably more risk spilling wort trying to squeeze out air with the cube on an angle, so I just don't bother. Otto Von Blotto Posted August 15, 2019 Share Posted August 15, 2019 I also aim to fill the cube fully to minimise the amount of air squeezing needed, but if that means draining a heap of hot break (the sludgy crap at the bottom after the boil) into it then I won't.
