Not salumi but a meat product none the less.  Been getting into my jerkys as of late and a mate put me onto using corned silverside as its a relatively cheap cut of meat that turns out well if your carful not to add too much salt.

Got a kilo for -$10 cut it up into thin strips then decided to experiment with a spicier jerky.

Hot cayenne pepper powder

Garlic

Onion powder

Dash of Worcestershire sauce

Dash of soy sauce

Five finely diced Trinidad scorpion chillis seeds include

A lot of cracked pepper

A  large spoonful of my home made Carolina reaper / ghost pepper / Trinidad scorpion hot sauce

And for a random additive Chinese chilli oil which in hindsight was a good idea as it just leeched out of the meat as the dehydrator did its thing and made a mess

Tasted good and got a decent amount out of the kilo flavour is a slow heat that creeps up on you but isn't unpleasant at all. Was doing a training course the other day gave a piece to the instructor then got to enjoy the next 10 minutes of him hiccupping from the chilli bite of the jerky.

8/10 would make again without the chilli oil.

Try not cured silverside, don't need nitrate in jerky, but tastes good for sure.
I love a good jerky, I may have to smoke some again soon, smoked is great.
