Patrick O'Neill
Hi Guys I have made up a kit of Aztec Gold and the weather has been bloody hot in Melbourne. The brew temperature has gone to 30 odd degrees. What goes??? Should I bottle it, Throw it out or just cry in my beer??? Right now seems to taste/test OK TonyO
PaddyBrew2
How far into fermentation is it ? do anything you can to cool it down. Cold towels. Fans. Ice bath. You’ll get some funky esters at those temps from the final product

Laundry trough can be a good spot to put the fermenter to surround it with cooler water. Cover it with a wet towel with its ends in the water. Add ice if you have it. Freeze a couple of water bottles and swap them around as they melt. If you can get it back to under 25 degrees that would be good, 20 even better, but that is almost impossible without refrigeration. Definitely do not throw it yet by any means.
