fearnobeer Posted January 6, 2019 Share Posted January 6, 2019 Gday all.just made a hoppy pale ale,the one gash from cellar dwellers made.anyway it was a bloody hot day yesterday in nsw.i waited for the southerly change to hit before i got started.when i sprinkled the safale us 05 in it was 28c and slowly dropping.it took 4ever to drop below 24.yes i forgot to mention i emptied out my kitchen fridge and put the fermenter inside.i woke up around 230am and checked the temperature. It was between 16 and 18c..i panicked abit and took it out and stuck it under the stairs. Anyhow its been about 18 hours.no sighn of any action on top yet,iam abit worried i killed the yeast first up with the heat or it went to sleep when it was chilled.iam i worried for nothing,need patients or ive buggerd the brew,.any thoughts out their would be much appreciated..Cheers.. Greenyinthewestofsydney Posted January 6, 2019 Share Posted January 6, 2019 Will be fine mate. You would need it around 40+ to cause damage to the yeast. Would expect it to kick off within 36 hours. jackgym Posted January 6, 2019 Share Posted January 6, 2019 Don't panic yet. One of my first brews I added the yeast at 28c (can't remember if it was Cooper's yeast or US-05) and it was okay. US-05 takes a while to start but I'd expect it to be active soon. 18c is the ideal temp for ales, by the way. Link to comment Share on other sites More sharing options...
