I'm trying to stay away from a lot of fried foods these days but love fried chicken too. So a few years ago I went looking for a way to make chicken like this without deep frying.

Baked Crispy Buffalo Chicken Wings

I've cooked these quite a few times over the last few years but use chicken thighs instead. Bloody terrific, & a lot healthier than deep frying.

Goes great with your blue cheese sauce too Benny! 😉

Ahh so that's why the snags look a little longer than normal! 😜

Those alpaca's have nasty temperaments too. I'd eat one!

Seriously try meatheads chicken... have a cheat day if you can. Go for like a 2 hour hike then have his friend chicken

If you don't make the sauce that goes with it be careful with your added salt levels as they can come across a little salty if you add too much. I don't make the sauce & just eat em straight from the oven as is. I've tinkered with the base recipe a little over the years to balance the salt levels a little better, & added a little sugar & a few herbs into the mix, but you can alter it to what you personally like. The baking powder is the key for the crispiness though.

Baking powder in reality is "pure salt"... Sodium bicarbonate and Potassium hydrogen tartrate - a mixture of two Salts... no not the old NaCl table Salt…. but bound to provide salty input...

Good stuff.  I need to follow your lead on this one so I can live a bit longer to be able to drink more beer and eat more dried Italian/German sausage!

Sweet fresh small white onion, home grown chives, fresh garlic, quality EV olive oil, fresh lime juice, lemon salad dressing, fresh red chilli no seeds, Aldi sweet gourmet tommies, nice fresh Lebanese cukes, Lucerne (aka alfalfa) sprouts, black pepper... and black pepper coated smoked salmon.... some flaked almonds for texture... reasonably tasty bit of gear I say ; )
