So a few years ago I went looking for a way to make chicken like this without deep frying. Baked Crispy Buffalo Chicken Wings I've cooked these quite a few times over the last few years but use chicken thighs instead. Bloody terrific, & a lot healthier than deep frying. I don't make the sauce & just eat em straight from the oven as is. I've tinkered with the base recipe a little over the years to balance the salt levels a little better, & added a little sugar & a few herbs into the mix, but you can alter it to what you personally like. Baking powder in reality is "pure salt"... Sodium bicarbonate and Potassium hydrogen tartrate - a mixture of two Salts... no not the old NaCl table Salt…. but bound to provide salty input...
