Ocean's of Ale-
Quiet a lot of all grain recipe's for porter ales seemingly call for as much as a pound or 450gs of medium crystal (60°lovibond) to the mash, my question is can i simply substitute half of that amount (225gs) and opt for a 120° lovibond dark crystal. Or would this compromise the recipe to much?? Apologies if this subject has already been addressed. Cheers mates
Hairy
It doesn't quite work that way. Medium and dark crystal provide a different outcome to each other and it isn't really a matter of just halving it. It would still make a nice beer though, just different to your intended recipe. The Captain!!
Is that equal to same amount of sugars for a different colour?

Hairy
The longer you roast the grain you develop different flavours etc. If you halve it then you are just getting half of the dark crystal flavour.
Ocean's of Ale-
Cheers guys thanks for you responses I suspect that you're spot on hairy, i could be mistaken but i assume that the more roasted the crystal grain (60-80-120 lovibond) prehaps the less sweeter the flavour is and more nutty and slightly more tannins it omitts, and it would certainly be a variation on the recipe. My crystal curiosities weren't motivated by thrift but to understand it subtle process. Thanks again.
