Seal could potentially slow the ferment due to pressure restriction so impact on rate and the final ferment achievable... then it will be a balance between pressure constriction via the bag... and the microbial population to see how much grunt each has... like tree roots under concrete footpaths... however. noting that the organic matter within the bag has a finite capability to generate carbon dioxide before they are done...
