So @Ben 10 Now that you have done a few mead's, do you feel you have a sweet spot for ABV that tastes best? 

Also, yeast? Got a particular strain thats best?

I see the dry stuff at the LHBS is the MJ branded one. Heard this on is the Magnum of the Mead yeasts ha ha ha

Only made a few. Made the JAOM with bread yeast. Very good, very easy.

Made one with a liquid yeast, and the current one has the MJ yeast. The descriptor for that suggested an estery yeast. Mine is still going I think, I make move it off the yeast in the next day or so.

Think they have all beeen 12% to 15% which seems lovely.
