2 brews in 5 days... must be NSW state competition time!  Will be fermenting these shortly, both on US-05, both in the temp controlled fermentation fridge.

 

I am entering an IPA.  Haven't brewed one in a while, but I do love my IPAs when I go out for a beer at the local craft beer bars.  Total malt bill is 6.04kg, hop bill is 300g.  This is a big beer.  I don't think I'll get down to 1.011 as per beer smith.  Probably 1.013-4.

 

60g of the hops are in the cube.  This is my first attempt at double-dry hopping.  Will dry hop with 75g of Cascade/Centennial/Simcoe/Amarillo as it approaches the end of fermentation.  This will stay in for 3 days, then fished out.  2nd lot of dry hops in for another 3 days.

 

Looking forward to this one.  Had that strong backbone of bitterness from a good amount of long boiled hops in the kettle sample.

Hi all,

Put down my second attempt of my version of the 'Coopers Fresh Draught' recipe last night.

1× Coopers Draught Tin 1.7kg

1.2kg Coopers Light Dry Malt

Made to 23 litres (filtered water) 

300mls harvested, w-34/70

Pitched at 12°C

Set fridge to 10°C

Dry hop to follow post ferment  Cascade 25g

Now the anxious wait,  the last one showed krausen after 36 hrs but was pitched at a higher temp.  But hopefully tomorrow after work I'll see some loving.....?

I am brewing tomorrow but still haven't settled on the hops yet. I am planning on making a few pale ales with my standard pale ale grain bill of:

85% Maris Otter
10% Munich I
5% Caramunich I

The freshest hops I have are:

Wai-ti
Mandarina Bavaria
El Dorado
Riwaka
Cascade

I am thinking of saving the Mandarina Bavaria for an American Wheat Beer and perhaps using El Dorado & Riwaka tomorrow with Wyeast 1450 Denny's Favourite 50.

Does anyone on here have any experience with Wai-ti that they could share?

I ve been thinking about trying to harvest some yeast from La Sirene. I absolutely love their funky pale ale. Actually most of their beers are sensational.

Give it a go mate. Just build it up slowly from a low gravity starter stepping it up.

Active cell numbers are always hard to know though. The brew I used mine on didn't ferment out likely due to not enough cells, so I used some commercial stuff to finish it off. It had certainly done enough that I could still taste it's influence.

Skim of bubbles last night at 48hrs,

Woke up to nice fluffy white krausen about half inch thick at 56hrs. 

Fingers crossed for another successful fermentation.

Nice choice & use of hops there Hairy. There is hope for you yet. ?

You'll notice the improved flavour subbing out the Magnum for bittering.

6 days on , fermented at 18c with us05, and its only down to 1.018? After 6 days I would of thought it would be lower ( started 1.038)?

Yeah, I left that bit out, I bumped it up to 20 yesterday morning. It was 1.022 Friday at the 4 day mark. Seems strange , will check it again in 48 hours, see what's happening...
