Really appreciate your help and feedback!

Yep the 'base case' is doing ok - and it will be nice to see how a bit of bottle conditioning does to it over the next while.

And then I will look at how to change it up next... will be really cool to see how things change.

The only unknown is what Coops Yeast really is hey ?

; )

Anyway... I will be doing WB06 next time and crank things up to 24degC... and see if I can drop in some Mandarina!

Not sure if anyone is following this thread anymore... but am drinking the first Hefeweizen (Coopers Yeast) and the second - but with Coopers Liquid Wheat Malt added - and racing away at 24 degC with a start at around 27 is burbling away in the background...  Wheatie 1 is drinking pretty much ok... But I think the addition of Liquid Wheat malt and no dex - instead some DME barley... should deliver a superior result.... I cannot think what AG would deliver?

Anyway... need to get this baby out of the fermenter and into the bottles and off we go.

Does anyone know whether adding dex or some extra barley malt for secondary ferment makes any difference ?

Hey there Greeny,

The latest iteration of Hefeweizen is more of a bock bier - is pretty big - so the use of the SAF ALE WB06 is not strictly the only difference... but it is a good drop...

I used dex drops for convenience in the bottles... otherwise full malt... is a pretty good strong brew...

And I think the higher temps have given some cloves... good stuff.  Might be good next time to try some Mandarina hops.

Looks very nice there mate. Love the glass too. Glad its turned out good for you. I got to get to brewing another wheat. It goes down well over summer.

I won't lie, wheat beer yeasts aren't my specialty, but from reading others posts over a few years on this & other forums the WB-06 is a little on the neutral side for a wheat beer strain. What I mean by that is I've read numerous posts by others that have fermented at different temps to try & push the clove at the lower end, or the banana ester at the higher end & not quite attained what they desired with this strain, probably (my guess) due to the neutrality of the WB-06. It likely has a broader spectrum of ferment temperatures that it can work in without throwing off-flavours & esters unlike some of the more specialised strains that tend to be more sensitive to ferment temperatures.

Yup a late boil addition of these in a wheat beer would be nice I reckon.
